Belizean Stewed Chicken

Ingredients:

3lbs of chicken thighs legs and breasts*** 1 ball of recado or annatto (for color)*** 2 cups of water*** 1 large onion sliced*** 1 medium green pepper sliced*** Salt and pepper to taste*** Worcestershire sauce to taste ½ cup cooking oil

Instructions:

Wash chicken pieces in lime and water then rinse off. In mixing bowl, place recado and water, mix until smooth. Add pepper, salt, Worcestershire sauce, onions and green pepper; this will make a very tasty marinade! Empty marinade in a large bowl and mix in the chicken pieces. Leave for about an hour so in order for the chicken to soak in the flavors of the marinade. Heat the cooking oil in a large frying pan. When the oil is very hot place some of the marinated onions and green pepper slices to cook for about two minutes. You will need medium heat to cook the chicken. Drain the chicken pieces and place in covered frying pan to cook, turning pieces when brown. You will need to watch the pan very closely as the onions you’ve placed at the bottom of the frying pan will make the chicken brown very quickly. While chicken is browning, add a little of the marinade at a time, turning pieces so they brown evenly on all sides. Turn the heat even lower as you add the remaining marinade and leave to cook covered until tender. Cooking time is about 45 mins
