Cassava Pudding
Ingredients:
3 medium cassava 1 cup milk 2 Tsp margarine 2Tsp baking powder 1 cup sugar 1/2 Tsp ground cloves 2Tsp vanilla 1 cup water
Instructions:
Peel, wash and grate cassava. Add coconut milk and margarine. Stir in baking powder, sugar, cloves and essence. Add water to bind texture. Pour into a grease pan where mixture will not exceed 2 inches in height. Heat oven at 375 degrees and bake until brown. A traditional Garifuna dish the "Cassava Pudding".
