Escabeche
Ingredients:
1 chicken (3 to 4 lbs)*** Vinegar*** Ground black pepper*** 10 spice seeds*** 2 jalapeño peppers*** 3 lbs sliced white onions*** Salt to taste*** 10 oregano leaves*** Garlic***
Instructions:
Boil spice seeds, oregano leaves and garlic in water. Add chicken and cook until tender. Remove chicken, cut into pieces and season with salt and black pepper. Place chicken pieces in baking pan, and bake at 400 degrees Fahrenheit until brown. Add jalapeño peppers and ¼ cup vinegar (to taste) to chicken broth. Placed browned chicken into the broth, add sliced onions, cover, remove from heat. Serve with fresh corn tortillas.
