Rice and Beans
Ingredients:
4 cups of white rice*** 2 cups softened red kidney beans*** 2 cups of coconut milk*** 2 cups of water*** 1 onion sliced very thinly*** Slivers of green pepper*** Salt and pepper to taste*** A dash of ground thyme***
Instructions:
Wash rice thoroughly. Mix red kidney beans with coconut milk, water, onion, green pepper, salt, pepper and thyme. Bring mixture to a boil. Mix in rice and cook over gentle heat in a covered pot. Wait until liquid dries up and stir once with a fork. Add a little water from time to time until rice is cooked. Cooking time will be approximately 30 minutes. Serve with stewed chicken and potato salad.
