Whole Tilapia with Flavored rice Topped with 2 Cheese

Ingredients:

Whole Tilapia 13-15 oz 1 piece Romano Cheese 4 slices Cooked rice 3 ounce Parmesan Cheese 2 tbsp Black olives, chopped 1 tablespoon Carrots, sliced 6 slices Green olives, chopped 1 tablespoon Zucchini, sliced 6 slices Garlic cloves, chopped 2 Green plantain, sliced 6 slices Green herbs, chopped 2 tablespoons Onions, chopped 2 tablespoons Olive oil 1 tablespoon Salt to taste Black pepper to taste Thyme leaves to taste To garnish Assorted green herbs Lime 2

Instructions:

De-bone the fish through the back, leaving head and tail attached to the fish. Wash the fish and dry with paper towel. Rub the fish with salt and black pepper. Sweat the onions and garlic in some olive oil. Add the green herbs, olives and the cooked rice. Stir fry for about 5 minutes, add salt & black pepper to taste, then stuff the fish with the rice mixture. Bake the fish in an oven for about 15 minutes. Mix the Romano and Parmesan Cheese and top the fish with this mixture and bake for 5 more minutes. Sauté the vegetables in the rest of the olive oil. Season with salt & pepper. Place the vegetable medley in the center of the plate. Place the fish on top of the vegetables. Place the green herbs around the dish and garnish with lime wedges.
